Middle Eastern Spice Mix Recipe


How to make a Middle Eastern Spice Mix

There are many different spice blends in the Middle East varying from country to region.

This Middle Eastern spice mix recipe has been specially blended by Chef Jeena.

As with Indian spices, Middle Eastern spice blends have a variation of some select spices such as cumin, coriander, turmeric, sumac, mint, thyme, nutmeg, pomegranate, cinnamon and many more.

Middle Eastern cuisine uses garlic, olive oil and lemons just as the Mediterranean.

This delicious and aromatic spice blend is very easy to make, there is no roasting of the spices.

Chefs Middle Eastern spice blend recipe can be used to sprinkle on food, marinate meats and more.


Spice ingredients


1 + 1/2 tsp Cumin
1 tsp Coriander
1/2 tsp Sumac
1/4 tsp Dried mint
1/2 tsp Dried thyme
1/4 tsp Dried pomegranate seeds
1/2 tsp Cinnamon
1/4 tsp Nutmeg
2 tsp Paprika
1 tsp Salt
1 tsp Light brown sugar
1/2 tsp Turmeric
Pinch black pepper

How to make Middle Eastern spice mix/blend


Take all of the spices listed on the ingredients and place into a coffee grinder or spice grinder.

Pulse for 1-2 minutes until the pommegranate seeds become powder.



Keep in a sealed container until used.

Vegetable Curry Recipe

Here is my vegetable curry recipe.

It was so tasty we ate it all up and left hardly a speck in the pan.

It was very aromatic with the freshly ground spices and the vegetables give it lots of delicious flavour, my vegetable curry is easy to make, healthy to eat and really tasty.

Ingredients..
1 Onion (sliced)
1 Small Onion (blended)
2 Tomatoes (peeled and chopped)
4-5 Small Spring Onions (chopped)
1/2 Cup Fresh Peas
3 Savoy Cabbage Leaves
Handful Mushrooms (chopped)
Olive Oil
Water
2-3 Inch Fresh Ginger
2-3 Cloves Garlic
Spices..
Pinch Dried Chilli Seeds
1 tsp Turmeric
1 tsp Cumin Seeds
1 tsp Coriander Seeds
1/2 Stick Cinnamon
Pinch Dried Curry Leaves
1/2 tsp Paprika
1 tsp Garam Masala
Pinch Salt (optional)



Getting Started.....

First put your coriander and cumin seeds into a little pan and gently heat them up until you can smell the aroma. Quickly take them off the heat and grind to a powder with a mortar and pestle or electric grinder. Also grind your garlic and ginger to a paste with a drop of water. Now place your cabbage and peas in a pan of hot water and simmer.


Drizzle a little oil in a large pan and add your onions. Cook until golden then add your garlic/ginger paste, tomatoes and spring onions. stir well.



Now add your dried chilli seeds, turmeric and a drizzle of oil. Stir well. Add your ground coriander/cumin seeds, stir well and simmer.



Drain your peas and cabbage, cut your cabbage into pieces and leave to the side. Add a drizzle of water to your curry, careful not to add to much just enough to loosen the sauce. Add your Cinnamon and stir.



Add your cabbage and peas, stir well. Add your curry leaves and paprika then your mushrooms with a little more oil.



Simmer and keep stiring well in between. Add salt if required, cook until mushrooms are cooked.



Take out your Cinnamon stick and add some fresh coriander leaves, stir.



Your Vegetable Curry is ready to serve.

Lamb Keema Curry - A treat for Jeena!

Tonight my hubby made me a beautiful Lamb Keema and it tasted fantastic!! It was aromatic and REALLY SPICY! Normally when we have a real spicy dish we have some yogurt at hand to take the edge off and keep the lovely hot flavour but tonight we run out of yogurt so we had a real hot treat instead.

It was so lovely to put my feet up and let my dinner be cooked for me - especially when it tasted so so good!

Wholewheat Dosa (Thanks to Nags.....)

Here is my first ever wheat dosa! I have never made a dosa before so I am sure all the dosa experts out there will let me know how it looks. We ate them with our Aromatic Chicken Special for our tea and my hubby loved them. Spicy Egg Curry

Tonight I made one of my hubby's favourite dishes - Jeena's Spicy Egg Curry. It is made with a few splashes of olive oil so the curry itself is really quite healthy. It is lovely and spicy but if you want it a little milder just add less chili's. I hope you enjoy this spicy egg curry we certainly did!


Ingredients
3 Small Onions(Sliced)
2 Small Yellow Capsicums/Peppers(sliced)
2 Large Flat Mushrooms(halfed then sliced)
approx 2 inch Fresh Ginger(chopped small)
approx 2 Cloves Garlic(chopped small)
4 Birds Eye Red Chili's(de-seeded chopped)
1 Red Chili(de-seeded chopped small)
approx 7 Cherry Tomato's(blended)
Olive Oil
Water
2 Boiled Eggs(freshly cooked,peeled and placed into cold water)

Spices
1 Tbsp Turmeric
1/2 Tbsp Coriander
Small 1/2 Tbsp Cumin
1/4 Tbsp Garam Masala
Large Pinch Dried Coriander Leaves
Sprinkle Sea Salt and Black Pepper(optional)



In some olive oil fry your onions until browned.



Grind or blend your garlic and ginger into a paste(a little water may be needed) and add to your pan. Cook for a minute making sure to stir.




Add your chili's, all your spices and drizzle some more olive oil in.




After stiring for a minute add your cherry tomato's with a splash of water to loosen it all up.



Add your peppers/capsicums with the salt and black pepper(optional). Keep simmering for a minute or so then add your mushrooms - keep stiring.




Add a large pinch of dried coriander.

When your mushrooms start cooking add your eggs .



Simmer with a lid on (if possible) for a few minutes making sure the eggs are heated through turning them over once.
