Ingredients
2 fish fillets (whiting or similar)
the zest of one orange
1 teaspoon oregano
1 teaspoon salt
1/4 teaspoon black pepper
5 tablespoons olive oil
1 bell pepper, seeded and cut into 1/2" wide strips
1 large potato, peeled and sliced thin
1 large yellow onion, peeled and sliced thin

Instructions
1 - Preheat the oven to 425 degrees Fahrenheit.
2 - Add 3 tablespoons of olive oil to grease a 9X13 baking dish.
3 - Add potato, onion and bell pepper and mix well to coat with oil.
4 - Mix oregano, orange zest salt, and pepper.
5 - Sprinkle 1/2 of the mixture on the vegetables.
6 - Bake for 25 minutes, stirring the vegetables halfway through the time
7 - Remove and lay the fish skin side down on top of the vegetables.
8 - Sprinkle with the other half of the spice mixture and the other 2 tablespoons of olive oil.
9 - Bake for another 7 minutes or until the fish flakes easily.

This dish could be accompanied by a tossed salad on the side, but it can stand alone as a healthy dinner for two
