Fish Fillets in cream sauce

Preparation Time: 15 Minutes
Cooking Time: 10 Minutes

Ingredients:
     6 fish fillets
     1 small carton of single cream
     70 grams of butter
     2 onions
     2 tablespoons of chopped parsley, salt and pepper

Butter an oven-proof dish and place the fish fillets in it. Pour the cream over this and
Sprinkle with salt and pepper. Heat half the butter and gently fry the finely chopped
Onion mix it with the parsley and sprinkle over the fish. Dot with remaining butter .
Bake in a moderate oven for 20 minutes. Serve

Suggestion: Accompany with potatoes baked in their jackets.

Truites meunieres

Preparation Time: 15 Minutes
Cooking Time: 10 Minutes                                                                             Serves 6

Ingredients:
     6 trout
     3 tablespoons of flour
     450 ml of milk
     2 shallots, finely chopped
     20 grams of butter
     Salt and pepper, parsley
Clean the trout and remove the scales. Soak for 10 minutes in cold milk, dry them
And cook the fish over moderate heat on both sides. Place the fish on a heated dish
Season with salt and pepper.Garnish with melted butter and finely chopped & shallot.

Suggestion: serve the trout with boiled or steamed potatoes. A sing the fish is cooked

Sole a la lautrce

French Fish Special 


                perpetration time: 30 minutes                                                   Serves 6 
                cooking time: 20 minutes                            

                Ingredients:
                     750 grams of sole, in fillets
                     3  tomatoes, 6 artichokes 
                     2  tablespoons of chopped fennel 
                    1/4 liter of fish stock 
                     2  tablespoon of butter 
                     1  bunch of spinach 1 lemon
                         half a glass of single cream 
                     1  tablespoon of flour, salt and pepper 

Season the fish fillets with salt,pepper and the fennel. place two slice of tomato on each fillet, then roll them up
and secure them with a toothpick. place the fish in deep saucepan , than add the fish stock and lemon juice
Simmer for 6 to 8 Remove the fish.place it in the middle of a serving dish and keep it warm.mix the cream
with one tablespoon of the butter and the flour, then stir then it into the fish stock. simmer for 5 minutes.
cook the artichokes in salted water and fry the well-cleaned spinach in the rest of the butter.place the artichoke hearts around the fish and top them with the spinach.pour the sauce over the fish and heat through
in the oven for 5 minutes.
Suggestion: Garnish with some peeled prawns or shrimp.place these on the serving dish before putting it in
