Coconut vegetable rice recipe


Chef has prepared a tasty coconut vegetable rice recipe.

This is a healthy and delicious rice dish that can be cooked as a side dish eaten alone with bread.

There is a good combination of vegetables in the rice so that when you are eating it one vegetable does not stand out over another vegetable - a perfect blend.





Ingredients for coconut vegetable rice

1 medium Onion (diced)
1 Sweet red pepper (diced)
5 Tbsp Frozen petite pois peas
1 large Flat mushroom (diced)
1 tsp Chef Jeenas Mild curry powder
1 tsp salt
150ml Light coconut milk
250ml Cold water
Rice bran oil
200ml Cold water

Rice

10oz Basmati rice
Cold water to soak



How to make a vegetable rice recipe




Soak the rice in water for 30 minutes.

Gently fry the onions and pepper until it starts to just soften.



Stir in the mushrooms.




Stir in the curry powder.



Stir in the peas and switch off the heat.



Drain the rice then add to the vegetables stir well.



Mix 150ml of light coconut milk with 250ml of cold water and 1 teaspoon of salt.

Pour the coconut milk mixture into the rice stir well.



Place a lid on and bring to the boil then turn down to the lowest heat for 12 minutes.

Do not remove the lid.



After 12 minutes lift the lid briefly stir the rice only a little, pour in the 200ml of cold water place the lid straight back on.

Turn the heat up on high for 10 seconds then back down to the lowest heat for 13 minutes being sure not to remove the lid whilst cooking.



After 13 minutes turn off the heat remove the lid and fluff with a fork.

Serve the rice directly on to the plate or lightly spoon some rice into a small bowl place a plate on top of the small bowl and turn upside down.

Toasted Pumpkin Seeds Recipe


Pumpkin seeds are very healthy for you, I eat them raw often.

Pumpkin seeds are very high in iron and contain other vitamins.

Roasting them gives the pumpkin seeds a wonderful nutty flavour.



Pre
heat your oven to approx 150C.

Put the pumpkin seeds on a baking tray drizzled with olive oil and sprinkle with a little sea salt.

Cook for 5-10 minutes DO keep checking so that they don't burn.

Your seeds do not need to be completely browned. Some seeds may 'pop' sometimes as you take the tray out.




Enjoy snacking on your toasted pumpkin seeds.

Spicy Mushroom Masala Recipe


I made this spicy mushrooms recipe today for our dinner and it was delicious.

You can eat this recipe on its own or with bread or as an accompaniment to another dish, we ate ours with sweet potato chips.

I use lots of healthy ingredients in this mushroom masala recipe.




Ingredients for Mushroom Masala Recipe
Olive Oil
2 Large Handfuls Small Mushrooms
2 Small Onions (finely chopped)
Small Chunk Ginger
1 Large Garlic Clove
approx 1/2 Cup Creamed Tomatoes
1 Green Pepper/Capsicum
1/2 Tin Chick Peas

1 tsp Turmeric
1+ 1/2 tsp Ground Cumin
2 tsp Garam Massala

1 tsp Coriander

1/2 - 1 tsp Chilli Powder (optional)


'Note...You can add as little or as much chilli to suite your taste.'


How to make Spicy Mushroom Masala Recipe


First grind your garlic, ginger (and chilli) into a paste.

Pour a little olive oil into a frying pan and brown your onions.

Turn down the heat and add the garlic/ginger paste - cook for a minute or so stiring it so it does not burn.

Add all your spices and some more olive oil, cook for a minute on low then add your creamed tomatoes and stir well.


Add peppers.



Add mushrooms.



Pour in a little water to loosen the sauce.



Cook on a medium heat for a few minutes.

Drain and rinse your chickpeas add them to the pan.

Simmer on a low heat for 5 minutes, if it needs thickening up add a little tomato puree and mix well.


Serve with chapatis or pita breads.

I served mine with sweet potato chips.

Healthy Chick Pea Patties


This recipe is easy and delicious, I cooked it for my husbands dinner today and he loved it, I must admit I did too!

They are tasty as a hot or cold snack and so very healthy.




8-10 Small White Potatoes
1/2 Red Onion (finely chopped)
1/2 Tin Chick Peas
1/2 Tin Peas
Small Chunk Ginger
1 Large Clove Garlic
1/2 Green Chili
1 tsp Ground Cumin
1 tsp Turmeric
1 tsp Coriander
1/2 tsp Garam Massala
Olive Oil
Chick Pea Flour



Make some mashed potato's (do not add butter - just salt!) with 8-10 small potatoes, place in a bowl. Gently heat your chick peas for a few minutes then add to the potato mash with your peas.





Stir together.




Now chop ginger,garlic and chili and grind in a mortar and pestle.




Add your finely chopped onion to a frying pan on a hot heat and cook for a minute or 2, then turn down the heat and add your ginger paste, gently cook for 2 minutes then add your spices - you may need to add some more oil.





Add to your mash mixture.




And stir well.





Make small balls in the palm of your hand then flatten them a little. Dip them into chickpea flour then heat up some oil in a frying pan on medium - high heat (do not cook on low or your patties will stick) and cook on both sides until brown.

Best Mashed Potato Recipe !!

I am going to tell you the secret of making the best mashed potato in the world! Never eat lumpy mash ever again!
Does it involve secret ingredients??....No! Does it involve some new unique mashing device?....No! 'Get on with it then' you say so OK I will tell you! .........




Peel,chop and boil your potatoes with a pinch of salt until soft.



Now the secret!

Use a SIEVE and wooden spoon to paste your potatoes through the sieve.



Then add your butter or which ever ingredients you want for your perfect mashed potatoes! Enjoy your lump free creamy mashed potatoes! :)

Handling Raw Meats in Your Kitchen

I just thought I would do a little post on food hygiene for anybody out there who hasn't cooked much before. I hope this helps with anyone cooking raw meat products for the first time. :)

1. When is comes to handling meat, poultry and fish we should always make sure we don't 'cross contaminate'. By this I mean touching raw meat,poultry or fish then touching other things without washing your hands first. It can be easier to put some hot soapy water in a washing up bowl before you handle your raw meat, this way you can dip your hands straight into the water to wash before touching anything else. Also personally I 'twice wash' any utensils I have used around raw meats. I wash them once alone then again with the rest of my pots that need washing. This is a personal preference. We can't all be running round our kitchens worrying about germs all day long this is not my intention, but it is very important to keep clean when handling raw meats or you could get poorly.


2. Always make sure your meats are cooked thoroughly and piping hot. Nobody wants to eat over cooked meat - your don't need to frazzle your food........but you really don't want to eat undercooked food or you will get very very poorly indeed! You can buy meat and fish thermometers that tell you when food is cooked or you can check by :-

1. Poking meat with a fork, knife or skewer and checking if the juice runs clear - if it runs bloody it is not ready to eat and still raw in the middle.

2. With chicken it should always be white in colour when cooked and never pink!

3. Cut into your meat to see if it is bloody and needs cooking longer. Also gently check with your finger in the middle of a meat and if it is hot to the touch with steam coming off it, it will be cooked.

Remember no one likes burnt food but meat and poultry is better to be a little over cooked than under cooked and getting poorly from it. As long as you make sure your food is cooked before eating then it should be delicious and perfectly fine. :)

Salmon of the Day!

Today I went Shopping and to my delight when I got to the fish section there was a HUGE Salmon staring at me all wrapped up a whole fish waiting to be bought for HALF the price!!
For 4 pounds 50 pence I was over the moon - until I when I got home and realised that I had to bone and skin it even though I had NEVER boned and skinned a whole fish before!

As you can see this fish is huge, I thought that by the time I had finished skinning, boning and chopping that I would only have a few scraps of salmon left!

But I had a try and...........




To my delight I got 4 HUGE pieces of salmon along with some mixed smaller pieces and I got out nearly every bone! Look :)




So I coated the salmon in some spelt flour mixed with salt and black pepper and fried it up serving it with some boiled Bulgar Wheat and fried yellow pepper/capsicum, a red onion and 5 or 6 carrots chopped. It was delicious and my whole family enjoyed it!

Jeena's Egg Curry!


To some people the words egg and curry just do not go together, but to me
they are a marriage made in spice heaven!

I love egg and I love spices,
my hubby thought this was very delicious when I made it for him tonight!

I am sure you too will like it just as much as the taste was wonderful !


You will need ...

2 eggs(one egg per person)
Half tsp Ground Cumin
Half Garam Massala
2 tsp Turmeric
1 Red Chili(chopped small)
2 Clove Garlic(chopped small)
Chunk Ginger(approx inch)
2 Small Onions(chopped fine)
3 Small Potatoes(pre-cooked to just under done)
2 Small Sweet Potatoes(pre-cooked to just under done)
Hand Full Small Mushrooms
2 Small Sweet Potatoes
Creamed Tomatoes
Water
Basmati Rice

Fresh Coriander
Olive Oil

To get started
First of all grind together the ginger garlic and chili. Fry the onions on high until browned then turn down the heat and add the ginger paste. Stir well then add turmeric, cumin and garam massala with some more olive oil, cook gently for a minute then add some creamed tomatoes and approx half cup of water along with your mushrooms and both potatoes.

Cover and simmer for 10 minutes while you cook your eggs.



Onto the eggs

To cook your eggs place them into a pan with cold water and a few splashes of vinegar.(vinegar stops the eggs from cracking and leaking) Bring to the boil then once boiling time them for 2 -3 minutes.



Then take them straight off, pour out the hot water and replace with cold - peel the shells off.


By this time your curry should be almost ready so first add the fresh coriander then place the eggs on top of your curry and shuffle the pan a little to wedge them into the curry.

Cook for a couple of minutes long gently stirring the sauce over your eggs.



Serve with basmati rice. Enjoy the wonderful taste !
