Salmon Salad Update.....
Healthy Date and Wheat Snacks
1 tbsp Set Honey
2 tbsp Healthy Margarine
1 Heaped tsp Almond Paste
1 Teaspoon Rice Flour
3 tbs Wholewheat Flour
Tiny Pinch Cinnamon
1 More tbsp Set Honey mix
4 tbsp Wholewheat
Hand Full Dates
Splash of Water and Honey
Melted Margarine
Mix 1 tbs of honey with the margarine and cream together, add the almond nut paste and mix well. Add the rice flour and sieve in 3 tbs of wholewheat flour with a tiny pinch of Cinnamon(you will be left with some wheat bits in the sieve, keep it to the side as it is added later) then add the other tbs of honey. It should form a doughy ball.
Then add 3 heaped tbs of whole wheat flour and the wheat bits from earlier. Rub together with your hands as thought to make (short crust pastry) a crumb like texture.
Then warm a little water with a little honey and mix in the dates, then pour the whole cup into one of the mixes and make into a biscuit dough. To make the plain dough just add a little water.
Roll the date mix flat and put onto your greased tray then spread with a little melted margarine(you can sprinkle on some grated coconut at this point if you wish) then roll the plain mix and put it on top of the date mix.

2 tsp coriander seeds
2 tsp cumin seeds
1/4 tsp mustard seeds
2 cloves
2 Small Garlic Cloves

1 heaped tsp Turmeric
3-5 Small Potatoes

I just thought I would let you all know that I will be posting lot's more recipes !
When it comes to cooking my own food I tend not to do so much measuring unless it specifically needs it. So I am going to measure my recipes as I do them for my family so that it makes it easier for you.

Curried Peas and Beans
Curried Peas and Beans recipe:
Ingredients:
1 Medium Red Onion
2 Tiny White Onions - cubed
Half Red Pepper/Capsicum - diced
Half Green Pepper/Capsicum - diced
1 Medium Parsnip - diced
4-5 Small Carrotts - diced
1 Medium Tomato - diced
Olive Oil
1 Tin Mixed Pulses
Half Tin Petite Pois Peas
Tomato Puree
Water
Spices you will need a teaspoon each of -
Ginger
Ground Corriander
Turmeric
Half tsp - Ground Cummin
3 tsp Garam Massala
Dried Corriander Leaves - large sprinkle
Recipe instructions:
Fry the red and white onions on a high heat for a minute or two then turn onto a
medium heat and add carrots. Cook for 5 minutes or so then add Parsnips. Cook for 10 minutes then add red and green peppers and tomato with all the spices EXCEPT the garam massala, pour olive oil over the spices then stir. Add enough water to cook them down with and leave on medium heat with a lid on for ten minutes or so, or until the carrots are to the texture you desire! Then add the tined beans, peas, garam massala and dried corriander cook for a few minutes then add a squeeze of tomato puree to thicken - drizzle some more olive oil if needed- simmer with lid on for 7 - 10 minutes. It will be ready when the beans have cooked. Add salt at the end if desired.
Hummus
Once you have made home cooked hummus you will never buy it from a shop again.
You can make hummus with tinned chickpeas here:
Gently heat and simmer the chickpeas for a few minutes then turn off.
Add 1 garlic, squeeze of lemon juice, 2 tablespoons of tahini with a tablespoon of olive oil, blend for 10 seconds then add the chick peas with some more olive oil or a little water.
The hummus should be quite thick so don't use too much water just a splash, blend until it resembles a thick paste.
Serve in a dish or on a plate with salad, bread, carrot sticks or whatever you want.
Healthy Chips
Once you have tried this double delicious recipe as a replacement for chips you will never feel guilty for eating chips again!
2 Medium White Potatoes or a few small ones
One medium Sweet Potato
Olive oil(rapeseed oil alternatively)
Spelt Flour or Wholewheat Flour (optional)
Peel and cut the potatoes into chunks, shape doesn't matter the more roughly cut the better! Drizzle with a little olive oil - you don't have to drench them. (If you want, sprinkle over some spelt or wholemeal flour - just a small hand full you do NOT need to coat the potatoes You don't have to use any flour if you don't want to.)
Drizzle some olive oil into a baking tray and put into a hot oven for 5 - 10 minutes until hot. When hot add your potatoes and cook for 10 minutes or so - pull them out and use a spatula to move them around a little, sprinkle more olive oil then put them back in the oven for another 5 - 10 minutes or until they are golden or too your liking. Don't worry if some stick to the tray sometimes perfection is in the home cooked look! Add sea salt if you wish, maybe some chili sauce too! Enjoy!
