Chicken curry recipes can come in many forms, different spices, textures and flavors.

This chicken curry recipe uses coconut milk, fresh ginger, garlic, chillies and a wonderful blend of aromatic spices.

Chef cooks the chicken curry using chicken on the bone, this way the chicken is tasty and succulent and the curry is infused with the chicken stock flavor that the bones give to the curry dish.

Simply follow the steps and cook your very own tasty chicken curry recipe.





Ingredients for chicken curry

2 Onions (blended)
2 Tbsp Dried coconut
6 Chicken pieces (thighs/legs)
2-3 Tomatoes (skinned/chopped)
6 Garlic (minced)
2 heaped Tbsp Freshly grated ginger
200ml Coconut milk
50ml Evaporated milk
200ml Water
1 Chilli (chopped)
2 Chillies (whole)
5-6 Mushrooms (chopped)
1 cup Frozen peas
2 Onions (chopped)
2 tsp Brown sugar
Vegetable oil

Spices

1 + 1/2 tsp Turmeric
2 tsp Coriander powder
2 tsp Cumin powder
1 tsp Paprika
1/2 tsp Fenugreek powder
1/4 tsp Cardamom powder
1/2 tsp Garam masala
1/2 tsp Salt
Handful dried Methi leaves
Handful dried Curry leaves

1/2 tsp Cumin powder
1/2 tsp Coriander powder

How to make a chicken curry recipe



Take a large pan on a medium/high heat,

Pour in a generous amount of oil, add the blended onions.



Keep stirring and chopping at the onions with a spatula and cook until the onions start to turn lightly golden.



Once the onions have turned a light golden color add the dried coconut keep stirring well for 1-2 minutes or until the coconut starts to toast.

Do not over cook the coconut at this stage.



Remove the coconut onions from the pan and place in a dish until later.



Pour a small amount of oil into the pan and sear the chicken pieces on each side.



Add the ginger, garlic, tomatoes, all spices and herbs (except for half a teaspoon of cumin powder and half a teaspoon of coriander powder), evaporated milk, coconut milk, water and chopped chili.

Stir well.



Place the two whole chillies into the pan.

Bring to the boil then turn the heat onto the lowest heat setting, place the lid on and simmer for 60 minutes or until the chicken is cooked and tender and falling off the bone.



Whilst the chicken pieces simmer for 60 minutes you can cook the onions.

Pour a little oil into a small frying pan, add the onions and fry until soft.

Do not overly brown the onions just cook until the onions soften, add the sugar, stir well and leave to the side until the end of the recipe.



When the chicken is cooked remove the chicken pieces from the pan.



Pick the chicken off the bone.



Add the half teaspoon of cumin and coriander to the pan.

Check for seasoning and add a little salt if needed.



Add the mushrooms to the pan, stir well cook on low heat.



After a few minutes add the peas.



Add the cooked onions to the curry stir well then add the cooked chicken to the curry.



Serve with fresh basmati rice and naan bread.

Lamb skewers - Lamb skewers recipe


You are invited to try an easy and delicious Middle Eastern barbecue recipe for lamb skewers. Enjoy middle eastern cooking and learn how to make the best lamb skewers.

Preparation Time 20 minutes
Equipment You will need 12 bamboo or metal skewers for this recipe.

Ingredients (serves 4)

4 lamb eye of loin (backstraps), cut in half lengthways, cut into 2cm cubes
Salt & freshly ground black pepper
1 x 200g ctn eggplant with shallots dip (Savion brand)
4 rounds Lebanese bread, cut in half
Lemon wedges, to serve

Pistou
2 tbs finely grated lemon rind
1 tbs finely chopped fresh continental parsley
1 tbs finely chopped fresh oregano
1 tbs olive oil
1 garlic clove, finely chopped
Salt & freshly ground black pepper

Method

  1. Thread the lamb evenly among skewers. Season with salt and pepper.
  2. To make the pistou, whisk together the lemon rind, parsley, oregano, oil and garlic in a small bowl. Taste and season with salt and pepper.
  3. Heat a barbecue or chargrill on high. Add the lamb and cook for 2 minutes each side for medium-rare or until cooked to your liking. Remove from heat.
  4. Place the eggplant dip in a serving bowl. Fold the bread into quarters to form triangles. Place on a serving platter with the dip. Arrange lamb skewers on a separate platter. Drizzle with pistou and serve immediately with lemon wedges.
Notes
You will need 12 bamboo or metal skewers for this recipe.
If using bamboo skewers, you will need to soak them in cold water for 10 minutes.

Middle Eastern spiced lamb pizza - Middle Eastern spiced lamb pizza recipe


Easy recipe for Middle Eastern spiced lamb pizza. Learn how to make Middle Eastern pizza. Need a really easy idea for dinner? You can't go past this spiced lamb pizza, which uses Lebanese bread as its base.

Preparation Time 10 minutes
Cooking Time 20 minutes

Ingredients (serves 2)
1 red onion, finely chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
250g lamb mince
salt and pepper
175g butternut pumpkin, peeled, deseeded, thinly sliced
1 1/2 tablespoons tomato paste
2 large rounds Lebanese bread
150g fetta, crumbled
2 tablespoons pinenuts
1 tablespoon chopped flatleaf parsley

Method

  1. Preheat oven to 200°C. When hot, place 2 flat baking trays in the oven to heat.
  2. Meanwhile, lightly spray a non-stick frying pan with oil spray and place over high heat. Cook the onion for 5 minutes or until golden brown. Add the cumin and coriander and cook for 1 minute. Add the mince, stirring to break it up with a fork, and cook for 5 minutes or until any moisture has evaporated. Season with salt and pepper and remove from heat.
  3. While the mince mixture is cooking, steam the pumpkin for 2-3 minutes or until just tender.
  4. Spoon the tomato paste over the Lebanese bread. Divide the pumpkin, lamb mixture, fetta and pinenuts between the 2 rounds of bread. Place on the preheated baking trays and bake for 8 minutes or until crisp. Scatter with parsley and serve immediately.
Notes
If your oven is not big enough you may need to cook each pizza separately.

Red Pepper hummus Recipe - How to Make Red Pepper Hummus


Enjoy middle eastern cooking and learn how to make this easy recipe for red pepper hummus. Use up those store cupboard ingredients and impress your friends at the same time with this delicious hummus dip

Ingredients
410g can chickpeas
1 large garlic clove
2 roasted red peppers from a jar
1 tbsp lemon juice
2 tbsp olive oil , plus a bit extra for drizzling
½ tsp chilli powder
Italian breadsticks , celery sticks and radishes with the leaves on, to serve

Method

1. Rinse and drain the chickpeas, then tip them into a food processor. Peel the garlic and crush in with the chickpeas, along with plenty of salt and pepper. Whizz briefly.
2. Remove any stray seeds from the peppers, then add them to the processor with the lemon juice, olive oil and chilli. Blitz again until really smooth. Taste and add extra seasoning and chilli for more of a kick, if you like.
3. Spoon into a bowl, drizzle with olive oil and serve with celery sticks, radishes and a stack of breadsticks for dipping.

Baba Ghanoush - Baba Ghanoush Recipe


Learn how to make the best delicious recipe for baba ghanoush. Baba ghanoush (sometimes spelled baba ganoush), a Middle Eastern spread and dip is similar to hummus, but is made with eggplant instead of chickpeas (garbanzo beans). This vegetarian and vegan recipe is particularly hummus-like, since it uses some chickpeas for a thicker texture.

Prep Time: 15 minutes
Cook Time: 45 minutes

Ingredients
1 large eggplant
3 cloves garlic
1/4 cup lemon juice
3 tbsp tahini
dash sea salt
1/4 cup olive oil
2 tbsp fresh chopped parsley (optional)

Preparation

  1. Slice eggplant in half, and roast in 400 degree oven for approximately 45 minutes, or until soft.
  2. Allow to cool slightly, then scoop out inside of eggplant, leaving skin behind.
  3. In a blender or food processor, combine eggplant and remaining ingredients, except oil and parsley, until smooth. Mixture will be somewhat thick. Slowly incorporate olive oil until well mixed. Mix in chopped parsley by hand. Serves eight.
  4. Enjoy with veggies, pita, or as a sandwich spread. I like to spread some baba ghanoush in a flour tortilla and add lettuce, tomatoes and veggies for a sandwich wrap.

Hummus Dip - Hummus Dip Recipe


Easy and tasty recipe for the best hummus dip. Hummus is one of the more popular Middle Eastern dips. Served with fresh or toasted pita bread, hummus makes for a great snack or appetizer. Tahini is an important part of the hummus recipe and cannot be substituted. However, it can be omitted.

Prep Time: 10 minutes

Ingredients
1 16 oz can of chickpeas or garbanzo beans
1/4 cup liquid from can of chickpeas
3-5 tablespoons lemon juice (depending on taste)
1 1/2 tablespoons tahini
2 cloves garlic, crushed
1/2 teaspoon salt
2 tablespoons olive oil

Preparation

  1. Drain chickpeas and set aside liquid from can. Combine remaining ingredients in blender or food processor. Add 1/4 cup of liquid from chickpeas. Blend for 3-5 minutes on low until thoroughly mixed and smooth.
  2. Place in serving bowl, and create a shallow well in the center of the hummus.
  3. Add a small amount (1-2 tablespoons) of olive oil in the well. Garnish with parsley (optional).
  4. Serve immediately with fresh, warm or toasted pita bread.

Chewy chocolate milk cake recipe


This is the ultimate chewy cake recipe!

Chefs chewy chocolate cake recipe is a combination of chocolate cake and milk cake bake together to form the most chewiest cake you have tasted.

The texture of Chefs cake is moist, soft, spongy and chewy chewy chewy.

This cake recipe uses a variety of ingredients including chocolate chips, milk chocolate bar, powdered milk and malted milk. Even though this cake recipe uses a combination of full fat and low fat malted milk, the cake itself does not taste of malted milk at all.

There is no need to melt chocolate or do anything over whelming in this recipe, it is easy and straight forward to bake.

This recipe looks amazing yet is simple to bake if you follow the easy step-by-step instructions below.

First Chef makes a cake mixture with chocolate chips added, then places milk chocolate pieces on top of the cake base. Jeena then tops the cake and chocolate pieces with a milk cake mixture which is heavier in consistency than the base. The milk topping pushes down onto the chocolate pieces whilst cooking which produces the blend and fabulous combination of textures and flavors in this wonderful cake recipe.

Ingredients for chewy chocolate milk cake recipe


For the chocolate cake base

100g Margarine
160g Soft brown sugar
2 Tbsp Maple syrup
1 tsp Vanilla essence
2 Medium eggs
1 Tbsp Milk
1 Tbsp Light condensed milk
5oz Plain flour
2oz Full fat malted milk powder
3/4 tsp Bicarbonate of soda
100g Plain chocolate chips
Pinch salt
80 - 100g Milk chocolate

For the milk cake top

2oz Margarine
2oz White caster sugar
3 Tbsp Light condensed milk
1 Medium egg
1/2 tsp Vanilla essence
1oz Light malted milk powder
1oz Skimmed milk powder
4oz Plain flour
1/4 tsp Bicarbonate of soda

How to make a chewy cake recipe


First the base of the cake is made.

Cream together the margarine and brown sugar using an electric mixer.



Add the eggs, milk, vanilla, maple syrup and condensed milk for the base.

Mix well.

To measure the condensed milk correctly dip a spoon into the condensed milk and drizzle the milk from the dipped spoon onto a measured table spoon, when the table spoon is full and level then place the dipping spoon back into the condensed milk and repeat as needed.




Add the flour, salt, bicarbonate of soda, malted milk and chocolate chips.

Mix well with the electric mixer.



Pour the base cake mixture into a greased and floured 8 inch square cake tin.



Break the chocolate into bite site pieces and place evenly on top of the cake base.




To make the milk cake top take a new bowl and cream together the margarine, sugar, condensed milk.


Do not use the electric whisk, stir the ingredients together using a spoon by hand.



Add the egg and vanilla essence, now use the electric mixer to mix.



Add the flour, bicarbonate of soda, powdered milk and light malted milk.

Mix well with the electric mixer.

The consistency will be a lot different to the base, it will feel slightly firmer to mixer than the base cake mixture.



Pour the milk cake mixture on top of the base and chocolate pieces.

Carefully spread to the edges of the cake tin, the milk cake mixture is a little more difficult to spread than the base.

To make it easier pour the cake mixture on a bit at a time all over the cake rather than in one big dollop.



Place on the middle shelf of a hot oven at gas mark 5 for 30 minutes.

Turn the oven down to gas mark 3 and bake for a further 25-35 minutes.

Remeber towards the end of baking keep checking with a tooth pick if the cake is cooked inside.

Sometimes it is possible the tooth pick could have melted chocolate on it right until the end of baking, so do not mistake melted chocolate for uncooked cake. If in doubt use a tooth pick in the centre of the cake and the edges to be sure that it is clean and has no undercooked cake on it.



Leave the chewy cake in the tin to cool a little then remove and finish cooling on a wire rack.



This is what the cake will look like warm out of the oven.

This cake is best eaten when fully cool so try to resist temptation!



Once left to cool this cake becomes very chewy and double as tasty to eat.


Left until the next day this cake is totally delicious and chewy so do try to leave it until the next day or at least some of it so you can see the difference in texture.

After 2 days the cake is perfect, but can you wait that long?
