Jiaozi is a Chinese dumpling, widely popular in China, Japan, Korea, as well as outside of East Asia particularly in the United States. Dumplings generally include a ground meat and / or vegetables rolled into a package filled with thin dough, and press the edges together, sealing or crimping. Dumplings should not be confused with wonton: dumplings has a thick skin, smooth, more flat, Flying dish (shaped like ravioli), usually eat soy sauce, vinegar dipping sauce (and / or chili sauce), but there is a wonton skin over thin, is a spherical shape, and often in the broth.

Baklava Cups Recipe

Ingredients

1/2 cup pistachios
1/2 cup walnuts
1/2 cup almonds
1 lemon, zested
1/4 cup, plus 3 tablespoons sugar
2 tablespoons butter, melted
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon vanilla extract
2 boxes mini filo shells, 15 shells each
1/2 cup water 1/4 cup honey

Special equipment: 2 (12-cup) mini cupcake pans, food processor

Directions

Preheat oven to 350 degrees F.

Arrange the pistachios, walnuts, and almonds on a baking sheet and toast in the oven until golden and fragrant, about 8 minutes. Let nuts cool slightly and add to a food processor along with the lemon zest, 3 tablespoons of sugar, butter, cinnamon, salt, and vanilla and pulse to combine.

Place mini fillo shells in wells of 2 mini cupcake pans. Add 1 teaspoon of the nut mixture into each shell. Bake until filling is hot, about 10 minutes.

Meanwhile, in a small saucepan over medium heat add the water, 1/4 cup sugar and honey and bring to a boil. Reduce heat to a simmer and cook until reduced and slightly thickened, 8 to 10 minutes. Pour 1 teaspoon syrup into each cup and allow it to soak in, then repeat with another teaspoon. Refrigerate at least 5 hours, or overnight.

Simple Baklava Recipe

Ingredients

1/2 cup almonds
1/2 cup walnuts
1/4 cup chopped dried apricots
1/4 cup plain bread crumbs
2 tablespoons sugar
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
Pinch of salt
1 stick butter, melted, divided
3 tablespoons honey
12 sheets phyllo dough

Directions

Special equipment: 2 mini-muffin tins

Preheat the oven to 350 degrees F.

Place the almonds, walnuts, apricots, bread crumbs, sugar, cinnamon, ground cloves, and salt in a food processor. Run the machine until the mixture is very finely chopped. Transfer the mixture to a small bowl. Add 2 tablespoons of the melted butter and the honey and stir to combine.

On a dry work surface place 1 sheet of phyllo. Using a pastry brush and the remaining melted butter, lightly cover the entire sheet of phyllo with melted butter. Cover the first sheet with a second sheet of phyllo and brush with melted butter. Continue until there is a stack of 6 sheets of phyllo. Cut the stacked phyllo rectangle into 12 equal pieces (Cut lengthwise into 4 pieces and widthwise into 3 pieces.)

Gently press each cut piece of phyllo into the mini-muffin tin cups. Press 1 tablespoon of the nut mixture into each of the phyllo cups. Gather the ends of each of the phyllo squares and twist to make a sachet shape. Continue shaping the remaining sachets in the other mini-muffin tin. Bake until the edges of the phyllo are golden, about 20 to 25 minutes. When cool enough to handle, remove the baklava sachets and transfer to a serving plate.

Creative Cooking Italian Pasta Recipes


Tagliatelle with Smoked Salmon
Tagliatelle with Smoked Salmon is an attractive Pasta Dish using the cucumber's light texture that go hand in hand with fresh smoked salmon.
Ingredients: 350g dried tagliatelle, 75g butter, 1/2 cucumber, juice and rind of 1 orange, fresh dill, 300ml light cream, 125g smoked salmon, salt & pepper and fresh Italian parsley.
Method: Boil water in large saucepan, add pinch of salt and dried tagliatelle. Cook pasta until Al Dente. Drain. Cut cucumber in half and scoop out the seeds. Discard seeds and slice thinly. Melt butter in saucepan. Add grated orange rind, dill and cucumber - simmer for 1 minute. Add cream and orange juice, season and simmer for 1 minute. Cut smoked salmon into bite sized pieces and stir through sauce quickly to warm. Drain pasta and toss into sauce. Decorate with fresh Italian parsley and finely shaven parmesan cheese.
Spaghetti with Herb Sauce
Herbs make a wonderful Sauce for Italian Pasta Recipes - Attractive, Aromatic and Full of Flavor.
Ingredients: 50g fresh mixed herbs, 2 crushed garlic cloves, 60ml toasted pinenuts or cashews, 150ml olive oil, 350g dried spaghetti, 80ml freshly grated parmesan cheese, salt and pepper for seasoning and Italian basil leaves for garnish
Method: Boil water in large saucepan, add pinch of salt and dried spaghetti. Cook pasta until Al Dente. Drain. Place herbs, crushed garlic and half of the pine nuts into a blender. Add olive oil gradually until mixture thickens. Toss pasta through pine nut mixture and add freshly grated parmesan, whole pine nuts and fresh basil leaves.
Fettuccini with Ham and Cream
Prosciutto is ideal for this dish. The richness and taste makes a Great Starter!
Ingredients: 125g prosciutto, 40g butter, 2 chopped shallots, 160ml cream, 350g dried fettuccine, 1 cup freshly grated parmesan cheese, salt and pepper and Italian Parsley
Method: Boil water in large saucepan, add pinch of salt and dried fettuccini. Cook pasta until Al Dente. Drain. Chop prosciutto into strips. Melt butter in a frying pan and sautee shallots quickly. Add prosciutto and cook a further 1-2 minutes or until golden. Season mixture and add cream. Toss sauce through fettuccini, season and add freshly grated parmesan and Italian Parsley.

Pistachio Hazelnut Baklava - How to Make Pistachio Hazelnut Baklava

Ingredients

8 ounces finely chopped pistachio nuts
8 ounces finely chopped hazelnuts
2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/2 cup white sugar
 
2 cups unsalted butter, melted
1 1/2 (16 ounce) packages frozen phyllo pastry, thawed
1/4 cup whole cloves
 
3 cups white sugar
2 1/2 cups water
2 tablespoons honey
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves

Directions

1. In a large bowl, toss together the pistachio nuts, hazelnuts, 2 teaspoons cinnamon, 1/2 teaspoon ground cloves, and 1/2 cup sugar.

2. Unroll thawed phyllo pastry, and cover with a damp towel to prevent drying and cracking. Brush a 10x15 inch jellyroll pan with melted butter using a pastry brush. Lay one sheet of pastry onto the buttered pan, and brush with more butter. Repeat until there are 8 buttered sheets of dough stacked. Sprinkle some of the nut mixture over this layer, then cover with 3 more layers of pastry, each brushed with butter. Sprinkle more of the nut mixture, then 3 layers of buttered pastry. Repeat this pattern until the nut mixture is gone, reserving 8 layers of pastry for the top. Each time a layer of pastry is placed, it must be brushed with the melted butter.

3. Preheat the oven to 350 degrees F (175 degrees C). Cut the pastry into strips, then into diamonds. Pieces should be somewhat small because they are so sweet. At this point each piece may be studded with a whole clove. Heat the remaining melted butter until boiling, and drizzle it evenly over the whole pan.

4. Bake for 1 hour and 15 minutes in the preheated oven, or until evenly golden.

5. While the pastry is baking, combine the remaining 3 cups sugar, water, honey, 1 teaspoon cinnamon, and 1/4 teaspoon ground cloves in a large saucepan. Bring to a boil, then simmer over medium heat for 15 minutes. Set aside to cool.

6. When the pastry comes out of the oven, immediately pour the syrup evenly over the entire pan. Be careful when pouring; the hot syrup may cause the butter in the pastry to boil up and splatter. Allow baklava to cool to room temperature before serving. Remove whole cloves from pieces before eating.

Easy Baklava Recipe - How to Make Baklava

This is simple and easy. Serve it in cupcake papers. It freezes well, too.

Ingredients

1 pound chopped mixed nuts
1 teaspoon ground cinnamon
1 (16 ounce) package phyllo dough
1 cup butter, melted
1 cup white sugar
1 cup water
1/2 cup honey
1 teaspoon vanilla extract
1 teaspoon grated lemon zest

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.

2. Toss together cinnamon and nuts. Unroll phyllo and cut whole stack in half to fit the dish. Cover phyllo with a damp cloth while assembling the baklava, to keep it from drying out.

3. Place two sheets of phyllo in the bottom of the prepared dish. Brush generously with butter. Sprinkle 2 to 3 tablespoons of the nut mixture on top. Repeat layers until all ingredients are used, ending with about 6 sheets of phyllo. Using a sharp knife, cut baklava (all the way through to the bottom of the dish) into four long rows, then (nine times) diagonally to make 36 diamond shapes.

4. Bake in preheated oven 50 minutes, until golden and crisp.

5. While baklava is baking, combine sugar and water in a small saucepan over medium heat and bring to a boil. Stir in honey, vanilla and lemon zest, reduce heat and simmer 20 minutes.

6. Remove the baklava from the oven and immediately spoon the syrup over it. Let cool completely before serving. Store uncovered.

Beef kofta with saffron yoghurt recipe

Ingredients (serves 8)

1/2 cup loosely packed fresh continental parsley leaves
1/2 cup loosely packed fresh coriander leaves
1 brown onion, quartered
500g lean beef mince
1 tsp ground coriander
1 tsp ground cumin
1 tsp ground mild paprika
1/2 tsp ground allspice
Salt & freshly ground black pepper
10 saffron threads
1 tbs hot milk
200ml container skim-milk natural yoghurt
2 tbs chopped fresh coriander, extra
2 tsp olive oil

Method

1. Line a large baking tray with foil. Place parsley, fresh coriander and onion in the bowl of a food processor. Process until finely chopped. Add mince, ground coriander, cumin, paprika, allspice and season with salt and pepper. Process until well combined and paste-like.
  
2. Preheat grill to medium-high. Use your hands to mould a heaped tablespoonful of beef mixture around a wooden skewer into a 7cm pointed-ended sausage. Place on the lined tray. Repeat with remaining beef mixture and skewers. Cover and set aside.
  
3. Place the saffron and hot milk in a small bowl and set aside. Combine the yoghurt, extra fresh coriander, salt and pepper in a small bowl and set aside.
  
4. Brush the kofta with a little of the oil and cook under preheated grill, turning carefully once and brushing with the oil, for 5-8 minutes or until browned and just cooked through.
  
5. Add saffron mixture to yoghurt mixture and mix well. Serve kofta with saffron yoghurt.

Notes
You will need 16 bamboo skewers for this recipe.

Baked falafel with roasted eggplant salad recipe

Ingredients (serves 4)

165g (3/4 cup) dried chickpeas
1 small brown onion, halved, finely chopped
2 garlic cloves, crushed
1/3 cup firmly packed fresh continental parsley leaves
1/3 cup firmly packed fresh coriander leaves
2 tsp finely grated lemon rind
1 tsp fresh lemon juice
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp baking powder
1 large (about 350g) eggplant, ends trimmed, cut into 2.5cm pieces
3 ripe egg tomatoes, each tomato cut into 6 wedges
Olive oil spray
1 bunch rocket, ends trimmed, washed, dried, leaves torn
1 small red onion, halved, thinly sliced
1/4 cup fresh mint leaves
1/4 tsp sumac
130g (1/2 cup) reduced-fat natural yoghurt (Vaalia brand)
Freshly ground black pepper

Method

1. Place the chickpeas in a large bowl and cover with cold water. Set aside overnight to soak. Drain well.
  
2. Preheat oven to 200°C. Place the chickpeas, brown onion, garlic, parsley, fresh coriander, lemon rind and juice, ground coriander, cumin and baking powder in the bowl of a food processor and process, scraping down the side of the bowl regularly, until smooth. Set aside for 30 minutes to develop flavours.
  
3. Line 2 baking trays with non-stick baking paper. Place the eggplant and tomato on separate trays. Spray the eggplant and tomato lightly with olive oil spray. Bake in preheated oven for 25 minutes or until golden brown and tender. Remove from oven. Increase oven temperature to 220°C.
  
4. Line a baking tray with non-stick baking paper. Divide chickpea mixture into 12 equal portions. Roll each portion into a ball and flatten slightly. Place on the prepared tray and lightly spray with olive oil spray. Bake in oven, turning halfway through cooking, for 15 minutes or until light golden brown.
  
5. Place the rocket, red onion, mint, sumac, roasted eggplant and roasted tomato in a large bowl and gently toss to combine. Divide salad among shallow serving bowls. Top with the baked falafel and a dollop of yoghurt. Season with pepper and serve immediately.

Notes
Sumac is a tangy, deep-purple spice commonly used in Middle-Eastern cooking. It's available in the spice section of Woolworths supermarkets.
This is a high fibre dish.

The Healthy Food Recipe Breakfast for Pregnant Women


Pregnant women have different nutritional needs to help the healthy development of the unborn baby. Below is a healthy food recipe for a pregnant woman good for breakfast, the whole-wheat buttermilk pancakes.
In preparing this recipe, allot one hour to prepare to settle the batter. The ingredients are:
1 cup of low-fat buttermilk
1 teaspoon of apple juice concentrate
3/4 cup of whole wheat flour
5 of tablespoons wheat germ
1/3 cup of nonfat dry milk
2 teaspoons of baking powder
2 large egg whites
Margarine or butter
A dash of salt to taste
Ground cinnamon to taste
There are variations to garnish the pancakes. It could be with unsweetened apple sauce, unsweetened fruit, maple syrup or yogurt. The yield for this recipe is approximately 12 pancakes.
Here are the procedures:
1) Make a puree with the use of blender all the ingredients to make a buttermilk-flour mixture. Don't include the margarine, egg whites and the garnishes.
2) Beat the eggs until firm in a mixing bowl. Add the buttermilk-flour mixture into the egg whites. Let the mixture stand for one hour.
3) Using a non-stick skillet, heat it and when it's hot enough, put some margarine or butter. Mix the batter and scoop a mixture into the skillet to make at least 3" pancake. When you see bubbles on the surface of the pancake, and the sides are lightly brown, turn the pancake to the other side. It will not take you two minutes to cook one pancake. Continue brushing margarine or butter in the skillet in between batches.
4) Decorate your pancakes with your preferred garnishing.
Here are two recipes to match with the pancakes during breakfast to satisfy the sweet tooth of a pregnant woman, the milk shake and the fruity oatmeal cookies.
Milk Shake
Before doing this recipe, freeze for at least 12 to 24 hours an overripe banana. The ingredients are:
1 cup of skim or low-fat milk
¼ cup of nonfat dry milk
1 piece of frozen overripe banana, cut into chunks
1 teaspoon of vanilla extract
A dash of ground cinnamon to taste
Just put all the ingredients inside the blender and make a puree. It makes one glass of milk shake.
For variations, add ½ cup of fresh strawberries or unsweetened frozen and one tablespoon of frozen apple juice concentrate before making a puree.
Fruity Oatmeal Cookies
You need the following ingredients:
Vegetable oil or vegetable cooking spray
10 pitted dates
6 tablespoons of apple juice concentrate
2 tablespoons of vegetable oil
1 ½ cups of rolled oats or a mixture of oats and raw wheat flakes
1 cup of raisins
¼ to ½ cup of chopped nuts
1 egg white
A dash of cinnamon to taste
Here are the procedures:
1) Turn the oven to 3500F. Using the vegetable oil or vegetable cooking spray, grease lightly the nonstick baking sheet.
2) Put the dates and the apple concentrate in a saucepan. Let it simmer until the fruit has softened. Using a blender, make a puree of the mixture and pour it into a bowl. Add the nuts, raisins, oats, 2 tablespoons of oil and cinnamon.
3) Using a separate mixing bowl, beat lightly the egg white. Gently fold it into the cookie mixture.
4) Drop enough batter into the prepared baking sheet.
5) Bake up to 10 to 12 minutes or until lightly browned.
This will make about 24 pieces of 2-inch cookies.

Tzatziki, chicken and tabouli wraps recipe

Ingredients

1 barbecued chicken
6 flour tortillas
250g tub Chris' Traditional Tzatziki dip
2 cups baby rocket leaves
1 small container tabouli salad (see note)

Method

1. Remove skin and meat from chicken. Discard skin and bones. Shred chicken.
  
2. Place tortillas onto a flat work surface. Spread each with 1 tablespoon of tzatziki. Top with rocket, tabouli and chicken. Drizzle each with a further 1 1/2 tablespoons of tzatziki. Season with salt and pepper. Roll up. Serve.

Notes
Note: Look for tabouli in the deli section of your supermarket.

Variation: Replace chicken with 12 purchased felafel balls, thickly sliced.
